Probably I mention that Cookies often comes back very late from work and unfortunately he doesn’t believe into eating before he goes so his last meal is very late. And since one of the rules in The Mullen Household is to eat at least one meal a day together I mostly wait with my meal until he comes back.
I know, you will probably say that we shouldn’t really eat that late, but… when I was consulting dietitian I was told, that it doesn’t matter when you eat, it matters what you eat. Though to not feel heavy before sleeping hold the rule to eat last meal 2h before you go to bed. She also told me to make sure the meal is not heavy, so no potatoes with gravy and fried meat…
This snack I put together one evening when I had quite a headache and I didn't want to spend too much time in the kitchen. It’s a fruit salad with some cream cheese. This idea can be used in many ways – as a light snack in the evening, as a dessert or easily even to be packed to work for lunch. Actually did that once and I was surprised how filing it was.
Did I mention that I’m constantly trying to lose weight? Yeah I do. My last great idea is to cut as much carbs as possible from my diet. Cookies said: AT LAST WOMAN!! and I said – don’t be so cheerful you are going there with me Buddy! You would have to see his face… well like popular ad says… priceless 0_o.
One of my biggest problems with cutting carbs is lunch at work. The easiest (for Cookies) to prepare was always sandwiches. I hate crunchy bread and I don’t like the heavy sour taste of whole grain flour bread, so mostly I was looking for rye or wholemeal but still it’s not diet enough. So now I try to find recipes to eliminate carbs at all or just most of it.
The salad below is really filling and and so damn tasty. It’s easy to manipulate the size of the portion, with the dressing make sure you either cut it in half or double ;-). Of course it can be served with different kind of dressing like simple vinaigrette or dill dressing – you choose!

New Year Resolution
I’m sure you noticed that lately I didn’t post too much. Not that I didn’t cook and make pictures. I just didn’t feel good lately and the writing needs some inspiration which I lacked tremendously
(yes, one of my favourite words, for some unknown reason).
And since today is New Years I’ve made a resolution: I will write more and regularly and will do a lot of other crap that I probably won’t 0_o, but definitely I will do my best in writing new cooking posts and keep my blog alive.
