Chix and Chorizo Gulash

Chix and Chorizo Gulash

I think EASY should be my second name… as much as I love cooking, I need things to be easy, because of my short attention span, I get distracted and/or annoyed fast if I don’t get visible results in a short amount of time. That

Dads Greek Fish

Dads Greek Fish

I was asked nicely today by our friend “Tom” 😀 to post something today. I looked into my stash of pictures and found this awesome meal that I learned to do from my Dad. It’s fish under the blanket of veggies. Even if it’s called

Delirium Dinner

Delirium Dinner

82 delirium dinner

So, I’m on my second week of “vacation” meaning I’m not “working”, but leave it to Cookies, he will find 43 billion things to do just at this right moment. Pity, I caught a cold in the end of my first week of “vacation” and have been literally dying since 0_o And imagine that, he (Cookies) is still demanding food 0_o. Today he made sure I will commit to cooking and since noon was annoying me with one question: What are we eating today, Babes? First 30 times I just said I don’t know yet, but every next one I was trying to get the worst food that was coming to my head and definitely one he hates the most. Though still didn’t know what to make. Then while I was laying under a pretty yellow-orange-beige-brown blanket trying to enjoy my book, I just saw this dinner on the plate. It’s all in the colors. Yellow for rice, orange for carrots and a brownish tint for grilled pieces of chicken. Of course it gave me the opportunity to use my AAAAACHEEEW, excuse me 0_o my newly exploding garden on the windowsill 😉 I just freaking love to hover over it with my fuchsia scissors and thinking which one to cut this time… Then through my stuffy nose ripped the delicious smell of fresh rosemary – I prepared my own Chix marinate using the small fragrant leaves.

Magda’s Way Beef Stew

Magda’s Way Beef Stew

As time progresses we are taught different things by our parents. It happens that certain stuff is the domain of Moms, and the others are of Dads 😉 And in my case it was the same, my Mom taught me how to cook and Dad

Idea dinners part 2

Idea dinners part 2

You will probably wonder why part 2, since there wasn’t part 1 – and wtf is an IDEA DINNER you ask? Okay here it is: Idea dinners is part of my blog that will contain simple, traditional, not fancy yet very tasty ideas for daily food. It’s just basic food that was eaten for ages in my family home. Also the reason for this is, that sometimes you just don’t want fancy, you crave old school flavours and simplicity plus you just don’t have time/will etc. for fancy. As 1st part it was meatballs with beetroots. It’s a very effective meal for family 2 day not too expensive dinner.

The part 2 I would like to propose today is pork chops with carrots and peas and mashed potatoes or fries, but it goes the best with mashed potatoes. Every one of my polish friends knows these ingredients and most likely ate it on a regular basis throughout childhood  0_o.

The only recipe today I’ll give you for peas and carrots – you will be surprised – the recipe is not my Moms, but Mom of my friend Ms Ds. I ate it a couple of times at her parents house  and liked it so much that I asked for the recipe. And Cookies absolutely loves this.

Veggie Salad

Veggie Salad

Veggie salad

I was always curious why the traditional polish vegetable salad is called ITALIAN? I started digging a little and actually found out that the mother of vegetable salad came from… Russia. But it still didn’t answer why Italian? Maybe one of you would know?

My Polish friends know this salad very good. It was – is served on polish tables for ages. None of the holidays or name days party could go without it. It’s easy to create, cheap and usually makes many servings. As many households, that many versions of this salad. Some add leak, some tuna, some ham or chicken – I present my version of this yummy salad. It makes really good lunch for work 😀

Ingredients:
4 medium to big carrots
2 medium to big parsley roots
½ of medium celery root
4 medium potatoes
6 medium cucumbers
3 big apples (the best sour, but I added golden delicious and it was perfect)
4 hardboiled eggs
for pea lovers – 1 can of peas
for pea haters – 1 can of corn
salt, pepper
2 tsp mustard
lemon juice (optional if salad is not sour enough to your taste)
mayonnaise

Preparations:
Boil carrots, parsley and celery root al dente. Boil potatoes and eggs. Let it cool down. Peel everything that needs to be peeled. If you like skin stuck in your teeth, don’t peel 0_o
Dice all the cooked veggies into small cubes. Peel apples and cube them alternately with sour cucumbers – if you do that apples won’t darken. Dice eggs. Spice with salt and pepper to taste. Add mustard and stir thoroughly. Move half of the salad to different container and for pea lovers add drained peas. For pea haters leftover part add can of corn. Of course if you like both you can mix and match both.

Store in the refrigerator in sealed containers. Add mayo when you want to eat it. Salad can be served for cold lunch or dinner, along with meat or just as a meal.

Until next time, take care of yourself and each other 0_o

P.S. Cookies thoughts: It hits the spot and is rather full of taste. Recommended, though be ready to invest a little time in the actual preparations of this. Though its worth it!
