I was asked nicely today by our friend “Tom” 😀 to post something today. I looked into my stash of pictures and found this awesome meal that I learned to do from my Dad. It’s fish under the blanket of veggies. Even if it’s called greek fish, it’s as much Greek as Russian pierogi (with potatoes and cheese) or Italian salad (vegetable salad I posted in the beginning of my blogging).

It’s an easy dish to make, but the actual preparation take’s a good amount of time, because the whole secret of this dish being spectacular is the way you prepare veggies. If you shred them… the dish will be okay but mush. The secret is to cut all the veggies into match size sticks. I think its called julienne? there is also second solution – buying a shredder which can do that. My Dad has one and his preparation takes 15 minutes ;-). I bet if you are skilled cutter you can cut it in the same amount of time, but I’m quite clumsy, so it took me 40 min and ended with pain in my right wrist. Cookies actually loves it so it was worth it! 0_o Can’t believe I just said that 0_o. With cutting it into the match stick size you will get the perfect texture and will be able to taste a variation of flavours, and avoid mixing everything in a unappetizing pulp.

Even if Poland is sea country, we don’t have salmons in Baltic sea which makes the price actually little overwhelming. So when I buy it, it’s either a special occasion or good promotion in one of my favourite stores 😉 This time it was the special occasion, our 7th wedding anniversary. Yeah, imagine that 0_o and we are both still ALIVE!! not saying sane but nonetheless alive LOL

Actually I didn’t have any idea how to prepare my noble fish, as I could do the never boring steamed salmon with broccoli but I thought the special occasion allows me to actually prepare something FRIED!!! Evil, I know 0_o.

Well, since salmon is tasty on it’s own I didn’t want to exaggerate with spices. Just thought the simplicity is the best in this case, and I used 3 ingredients including the salmon. One of which is the honey and raisins mustard I found lately while scavenging my favorite supermarket…

I don’t know if it’s working LOL cos I don’t have a scale but I continue to cut carbs from my diet – Cookies too. Actually he wants so much to eat something other than an apple, some yogurt and yes… peas with ketchup 0_o, that he doesn’t complain anymore, to not spook me LOL. I love it actually, cos I can put even garlic into the food and he won’t complain 0_o. Though this meal he likes as much as I do (rare), mostly because of the simplicity and we feel we eat healthy 😉

Cookies always says I'm a specialist in cooking shrimps 😉 but I just watch attentively cooking shows and listen to the ppl who really know what they are doing in the kitchen 0_o. One of my basic rules with shrimps comes from Jamie Oliver who said that shrimps love chili, so my every meal with shrimps definitely contains fresh or powdered chili or jalapeno.

This time I added ½ tsp of powdered chili and Cookies was moaning that his mouth was burning – therefore I lowered the amount, but feel free to use as much as you feel comfortable with 😀 Despite the bite of chilli pepper the meal was kind of mellow.
