New Year Resolution
I’m sure you noticed that lately I didn’t post too much. Not that I didn’t cook and make pictures. I just didn’t feel good lately and the writing needs some inspiration which I lacked tremendously
(yes, one of my favourite words, for some unknown reason).
And since today is New Years I’ve made a resolution: I will write more and regularly and will do a lot of other crap that I probably won’t 0_o, but definitely I will do my best in writing new cooking posts and keep my blog alive.
I’ll start with TAKE THE CHIX OUT, BABES! in cranberry sauce which is as always in my kitchen – easy and tasty! I believe it’s a billionth recipe to make chicken breast eatable and not too “undiet”. I found this recipe on Disney branded site
Cranberry Sauce Chicken

Ingredients:
- chix breast - 2 single
- oil - 1 tbsp
- sweetened dry cranberries - 1/2 cup
- apple juice - 1/4 cup
- chicken bouillon - 1/2 cup
- flour - for coating
- salt, pepper - to taste
- Dijon mustard - 1 tsp
Instructions:
Put cranberries into bowl, pour apple juice and bouillon, let soak until you need it. Cut breasts into desirable thickness, I like it cut in two cutlets horizontally. Sprinkle with salt and good amount of black pepper (the best fresh grinded). Coat with flour and heat oil on the non-stick pan and fry on medium heat until done on both sides. Remove chix and if possible keep warm.
Pour cranberries with liquids on the pan, scrape bottom for fried goodies, add mustard and stir good until all ingredients are thoroughly mixed. Add chicken on top of the mixture and simmer on low heat for 8 minutes or until sauce thickens.
Serve it with raisins/cranberry couscous and side salad.
