If you didn’t know, pork tenderloin contains as much fat as chicken breast – so it’s nice change for us dieting people 0_o. It doesn’t need too much work or cooking time. The meat is very tender and tastes great without too much effort. I encourage you to use this meat which is relatively not too expensive and what is more important: easy and fast to prepare. Make sure that you don’t cook/grill/fry it too long – it tends to get hard and rubbery if overcooked.

This meal can be served even for as much demanding person as your Mother-In-Law 😉

It was hectic as always today. Cookies got up very early for his activities, and I decided to be good wifey and get up with him 0_o. Helped with some stuff and took dog for a walk. Then came back and had really productive morning – really sometimes I surprise even myself 0_o Though got nice price for my effort – I love clothes shopping 😀 In the meantime Cookies was smsing me about dinner tonite and I said I don’t know what we are eating today… When he came back we went again 0_o this time to buy … hehehe lets just say it was needed. Then we stopped in Auchan for some dog food and Cookies ANOTHER micro sd card which happened to be in extreme promotion… I think he has already 5 of those 0_o, thank god he didn’t want another external hard drive, yet, do not get me started on that! Then Cookies mentioned that I didn’t buy my favourite cooking magazine yet, so we did and guess what … there was it. Inside was this awesome recipe for mustard-honey pork loin cutlets with mushroom-potatoes…. really sounds complicated? Nah, very easy and very tasty.

Ingredients:
5 thin pork loin cutlets
2 tsp dijon mustard
2 tbsp honey
salt and pepper
5 medium potatoes
500g mushrooms
½ bunch parsley
thyme or mushroom spice by Podravka
butter
oil

Preparations:
Start from boiling potatoes (can be leftovers), slice them not too thin neither too thick.
Beat cutlets to soften the meat, salt and pepper on both sides. One side smear with mustard and pour honey on top, set aside.

Prepare mushrooms, clean and slice. Heat butter with a little bit of oil and put mushrooms in, fry as long as they become brown, add potatoes and thyme or mushroom spice and fry together stirring from time to time. On the second pan heat a little butter with oil and fry cutlets on one side, and cover the top with leftover mustard and honey. Flip and fry until golden brown on both sides.

Serve with fresh crunchy lettuce or House Salad and dressing of your choice.

Moment of truth…

I have to confess something… I’m a chocoholic, yes. My name is Magda and I’m a chocoholic. My story starts a loooong time ago… when I got my first milk chocolate bar, who is the culprit for starting me on chocolate? I don’t know. Was it my mom? My granny? Or my dad? I don’t know, but I know I love chocolate – milk, bitter, creamy, stuffed, on waffles and cookies or on Cookies… shit what did I say again? I just love it, no denying that. My tragedy is I can’t eat too many sweets – I look at a chocolate bar and I suffer… BUT I found this wonderful Nigella Lawson’s recipe for Sweet and Salty Crunchy Nut Bars… I modified it a little and now they can run as 85% diet… unfortunately not 100% cos of a little sugar coming from milk chocolate, that’s one of ingredients. It took me only 20 min to make, so I rate it as easy…
    
Like I would do anything else on a Thursday afternoon 0_o. (Cookies edit: maybe wash some clothes?)

Ingredients
2 100g bitter chocolate bar the best 70% cocoa
1 100g milk chocolate bar
50g butter
1 tbsp honey
big handful of salted peanuts
handful of raisins
handful of walnuts (I believe you can stuff it with anything else… something naughty comes to my mind… like putting some gummi bears… UH OH 0_o)

Preparations:
Prepare water bath – pot with water and the bowl on top, make sure bowl doesn’t touch boiling water. Put chocolate bars, butter and honey into bowl and melt together stirring. After mass is smooth and glossy set aside for about 10 min to cool it down. Add peanuts, walnuts and raisins, stir thoroughly, Prepare small metal or plastic form, lay it out with plastic wrap, put chocolate mixture in, smooth it and refrigerate for 2 hrs. It should be solid and easy to cut into desirable size.

Unfortunately not transportation friendly, melts 2 min after it’s taken out of the fridge – so rushing is required 0_o. I don’t mind at all LOL.

P.S. I’m eating it while writing and I just left some chocolate smudges on my keyboard… Cookies will be pissed… but I’ll make it again cos he demanded it and he won’t bitch about smears!!!
