I don’t know if it’s working LOL cos I don’t have a scale but I continue to cut carbs from my diet – Cookies too. Actually he wants so much to eat something other than an apple, some yogurt and yes… peas with ketchup 0_o, that he doesn’t complain anymore, to not spook me LOL. I love it actually, cos I can put even garlic into the food and he won’t complain 0_o. Though this meal he likes as much as I do (rare), mostly because of the simplicity and we feel we eat healthy 😉

Couple weeks ago I joined Pinterest cos I saw awesome DIY ideas, that even me, a clumsy two left handed creature can do 0_o. As I spent more time on the site I found of course more categories of pins, where one of course was FOOOOD :P. Nothing new or weird. I started browsing and found this interesting recipe for beef meal.

The pin on the Pinterest led me to blogchef.net where I could read and learn how to make this incredibly tasty dish. Of course had to change some things cos of our likes and dislikes but the end result is 95% of the original recipe I believe. I served it with my favourite basmati rice and steamed broccoli florets. I have this nice rustic asian bamboo basket for steaming food, it’s really neat, cos I could place it over boiling rice and steam it along.

Ingredients:

500g (1 lb) beef flank steak (polish łata) I got only boneless beef thigh)
2 tbsp potato or corn starch
2 tsp oil
½ tsp fresh ginger
1 tsp garlic powder
½ cup soy sauce
½ cup water
2 flat tbsp brown sugar
2 tbsp rice wine (mirin) or just white wine vinegar
½ tsp cayenne pepper
1 medium onion
Oil for deep frying

Preparations:
Flush the meat under cold water and pat it dry with paper towels. Cut it against the grain into not too thick slices, the best would be one or two bites size. Put it into a bowl and sprinkle with the starch and set aside for at least 10 minutes. Make sure you won’t skip this step, because it’s very important for the rest of the meal.

While waiting for the beef, prepare the sweet-spicy-sour mixture. In the saucepan add 2 tbsp. of oil – heat up. Peel with a spoon (learned from Pascal Brodnicki) ginger and grade it on the small edges of a shredder. Toss into pot along with a garlic powder, stir fry for 10s. Add soy sauce, rice wine or vinegar and water. After another 10s add brown sugar, stir to make sure sugar dissolves in the liquid. Add cayenne pepper and boil for another 2-3 minutes, then set aside.

In the frying pan with high sides or a wok add a good amount of oil and heat it on high heat. Put meat in and deep fry for 3-5 minutes – it should be brown and crispy. After the meat is done, drain it on paper towels.

Remove most of the oil from the pan, leave like 2 teaspoons. Cut onion into feather like pieces and put into the pan and stir fry for 2 minutes, put the meat in and pour the sauce mixture. Boil until the sauce thickens and starts bubbling.

Yes, Cookies sometimes shows some spark of genius and he managed to enable comments under the posts 0_o so feel free to use them – just pretty please… no trolling!!! 😉

And how I became a Thai food “expert”? As always the process was easy… I found the recipe in the internet I think the link was on The Kitchn as usual 😉 This time I almost made it to the T, just added a little water cos it seemed a little too thick and I worried that the broccoli won’t get soft. Was it easy? YES!! Did it take a lot of time? Yes, but only because I’m clumsy. It took me several minutes to cut everything and change humongous broccoli FLORET into tiny little florets 😀

Ah and Madzia? 😉 your hatred towards peanut butter should evaporate 😉 it added spectacular flavour to the chicken. I can’t emphasize how good this recipe is. Easy and abso – f-lutely fantastic!

Amazing Peanut Butter Chicken

Ingredients:
2 1/3 tablespoons soy sauce
1 1/3 tablespoons creamy peanut butter
1 2/3 teaspoons white wine vinegar or 1 2/3 teaspoons rice vinegar
1/4 teaspoon cayenne pepper
1 tablespoon olive oil or 1 tablespoon peanut oil
1 1/3 boneless skinless chicken breast halves, cut into thin strips
1 tablespoon garlic
1/2 tablespoon fresh ginger root
1/4 cup chopped green onion
1 1/3 cups broccoli florets
1/3 green pepper,
1/3 red pepper
1/8 cup dry-roasted unsalted peanuts

Preparation:
In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.

Heat oil in a skillet or wok over high heat. Add chicken (cut into thin strips), garlic (shredded) and ginger (shredded), and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes. (don’t worry that whole time chicken looks like dead squid – it will brown sooner or later 0_o)
Reduce heat to medium, and add everything cut into strips: green onion, broccoli, peppers, peanuts, and the peanut butter mixture. Cook, stirring often, until broccoli is tender, and chicken is cooked through. It might be too dry, then add some water or soy sauce if you think dish is not salty enough.

Serve over rice or rice noodles.
