Veggie salad
I was always curious why the traditional polish vegetable salad is called ITALIAN? I started digging a little and actually found out that the mother of vegetable salad came from… Russia. But it still didn’t answer why Italian? Maybe one of you would know?
My Polish friends know this salad very good. It was – is served on polish tables for ages. None of the holidays or name days party could go without it. It’s easy to create, cheap and usually makes many servings. As many households, that many versions of this salad. Some add leak, some tuna, some ham or chicken – I present my version of this yummy salad. It makes really good lunch for work 😀
Ingredients:
4 medium to big carrots
2 medium to big parsley roots
½ of medium celery root
4 medium potatoes
6 medium cucumbers
3 big apples (the best sour, but I added golden delicious and it was perfect)
4 hardboiled eggs
for pea lovers – 1 can of peas
for pea haters – 1 can of corn
salt, pepper
2 tsp mustard
lemon juice (optional if salad is not sour enough to your taste)
mayonnaise
Preparations:
Boil carrots, parsley and celery root al dente. Boil potatoes and eggs. Let it cool down. Peel everything that needs to be peeled. If you like skin stuck in your teeth, don’t peel 0_o
Dice all the cooked veggies into small cubes. Peel apples and cube them alternately with sour cucumbers – if you do that apples won’t darken. Dice eggs. Spice with salt and pepper to taste. Add mustard and stir thoroughly. Move half of the salad to different container and for pea lovers add drained peas. For pea haters leftover part add can of corn. Of course if you like both you can mix and match both.
Store in the refrigerator in sealed containers. Add mayo when you want to eat it. Salad can be served for cold lunch or dinner, along with meat or just as a meal.

Little Goaties Lunch Salad
Everytime we go for weekly shoppings I always hear that Cookies has nothing to eat…
Of course, cos he is so damn picky that it’s ridiculous. So we walk in circles until he picks sth for his royal palate to handle – yeah mostly potatoes and eggs 0_o and cheese… Bread is bleh, ham is bleh… so mostly I don’t eat lunches with him or rarely what he eats. This time I had to use a mix of lettuce I bought a couple days before – which Cookies OF COURSE doesn’t like cos it has an evil green called RUCOLA! Thankfully it was Saturday so I already went to the yard store for some lunch meat (cold meat, cold cuts) and I bought 4 nice pork ham hot dogs. In the yard store I always can find something interesting – cos they order from local producers, not only from the big companies like Olewnik or Sobsmak. I always ask the lady what she thinks is the best within certain products and since I’m always nice and smiling she answers honestly 0_o. This time she told me they got new hot dogs made from straight pork ham meat. I tried it and yes these are really good. I wanted the salad to also look nice and funny hence I made it look like little goaties that I remember from one New Years party.
Ingredients for salad:
2 handfuls of lettuce mix
4 small good hot dogs
1 medium tomato
½ small green cucumber
handful of green olives (optional of course)
Ingredients for dressing:
1 tbsp mayonnaise
1 tsp dijon mustard
1 tsp olives marinade (optional to make the dressing less thick)
salt, pepper
Just stir everything together thoroughly, add some olives to the marinate if too thick, just be careful with salt then, as this marinade is usually very salty.
Preparations:
Cut hot dogs in 4 cm pieces, cut to the middle, then flip 180 degrees and cut the same way, it has to look like you want to cut it in 4 long pieces but in general as cross. You can boil it in water for few minutes until they “open” or on two drops of oil heat it up and brown a little.
Toss lettuce on the plate. Cut tomato as you like, cut cucumbers as you like – place it on top of the lettuce. Place goaties on top, over it some olives and sprinkle with dressing.

Childhood pleasure
I believe everyone of us have a dish that has it’s origins in our childhood. Something that you loved at 6 years old and love the same way now. For me it is a vegetarian meal, that my fathers grandmother brought from her home town Poznan. It’s easy, it’s cheap and it’s filling. And the biggest pleasure is, you can eat it with your hands 😉 I don’t know why but I like to eat with my hands and this is the meal I can do it legitimately without looking for a lame excuse 0_o.
This time I’m not going to give you the amount of ingredients cos as you will notice it’s easily adjustable for the amount of people. Remember one thing it’s extremely filling, I’m usually able to eat 3 medium potatoes 0_o.
I remember when I served my beloved potatoes and cream cheese for one of our first meals with Cookies… damn jackass was bitching and moaning and didn’t even want to try it traditional way and being a dick, he wanted to change everything without even trying… he pissed me off so bad I started screaming at him and tossing hot potatoes… that was the first time I threw hot food at him 0_o Now he eats it how I make, though I nicely ask if he will be able to digest cheese with chives 😉 I learned and he did to 0_o.
Ingredients:
potatoes
cream cheese
natural yogurt
salt. pepper
and any veggie you want to see in the cheese, like radishes, colorful pepper, onion, chives green cucumber etc. only one condition – it can’t be sweet. needs to be salty and spicy 😉
butter or margarine if you please
Preparations and serving
With this meal serving is as important as preparations ;-). Boil potatoes with skin until soft. While it’s cooking prepare cream cheese. In a bowl mix cheese with some yogurt to make cheese looser and more moist. Spice with salt and pepper to taste. Cube tiny other veggies you choose, mix thoroughly and set aside. Prepare table – put salt and butter, then pot with hot potatoes and bowl with cheese. Give everyone a plate and a knife and EAT ;-). All who likes this dish has their own technique. I like to peel potatoes while very hot, slice thick, salt a little bit, toss scrap of butter and then in the end big splash of veggie cream cheese – then by hand to mouth, DAMN IT’S GOOOOOD ;-). Remember it’s filling!
