Couple weeks ago I joined Pinterest cos I saw awesome DIY ideas, that even me, a clumsy two left handed creature can do 0_o. As I spent more time on the site I found of course more categories of pins, where one of course was FOOOOD :P. Nothing new or weird. I started browsing and found this interesting recipe for beef meal.

The pin on the Pinterest led me to blogchef.net where I could read and learn how to make this incredibly tasty dish. Of course had to change some things cos of our likes and dislikes but the end result is 95% of the original recipe I believe. I served it with my favourite basmati rice and steamed broccoli florets. I have this nice rustic asian bamboo basket for steaming food, it’s really neat, cos I could place it over boiling rice and steam it along.

Ingredients:

500g (1 lb) beef flank steak (polish łata) I got only boneless beef thigh)
2 tbsp potato or corn starch
2 tsp oil
½ tsp fresh ginger
1 tsp garlic powder
½ cup soy sauce
½ cup water
2 flat tbsp brown sugar
2 tbsp rice wine (mirin) or just white wine vinegar
½ tsp cayenne pepper
1 medium onion
Oil for deep frying

Preparations:
Flush the meat under cold water and pat it dry with paper towels. Cut it against the grain into not too thick slices, the best would be one or two bites size. Put it into a bowl and sprinkle with the starch and set aside for at least 10 minutes. Make sure you won’t skip this step, because it’s very important for the rest of the meal.

While waiting for the beef, prepare the sweet-spicy-sour mixture. In the saucepan add 2 tbsp. of oil – heat up. Peel with a spoon (learned from Pascal Brodnicki) ginger and grade it on the small edges of a shredder. Toss into pot along with a garlic powder, stir fry for 10s. Add soy sauce, rice wine or vinegar and water. After another 10s add brown sugar, stir to make sure sugar dissolves in the liquid. Add cayenne pepper and boil for another 2-3 minutes, then set aside.

In the frying pan with high sides or a wok add a good amount of oil and heat it on high heat. Put meat in and deep fry for 3-5 minutes – it should be brown and crispy. After the meat is done, drain it on paper towels.

Remove most of the oil from the pan, leave like 2 teaspoons. Cut onion into feather like pieces and put into the pan and stir fry for 2 minutes, put the meat in and pour the sauce mixture. Boil until the sauce thickens and starts bubbling.

Tortillas with Chorizo and Manchego Cheese

Lately in my country, Lidl – a store chain from Germany, got, what I think is a great marketing idea for their campaign, that uses only products from their stores. Actually, the first time since a PRUSAKOLEP ad*. I think it’s an interesting concept and I thought it had to hit the spot, when my colleague Daniel said he made one of the recipes posted on the special site, that they created especially for the campaign. The concept is easy – they hired 2 known chefs and they compete each week with recipe that contains only Lidl products. Lidl basically only sells proprietary products made by their company, under their brand name.

The recipes are easy and everyone can make them, clearly by design… (as evidenced here). So I did a lot of bitching and moaning to get these pictures and consent from Daniel to post it 0_o. From what Daniel said, it was really good, and rather easy to do.

Ingredients:

70 dag new potatoes

15 dag chorizo

8 dag manchego cheese

6 eggs

300 ml heavy cream (30%)

2 spring onions with chives
1 big red onion
handful of black olives
60ml olive oil
salt, pepper

Preparations:
Peel and boil young potatoes, then slice and set aside.

Heat the oven to 160 C, make sure you have grilling option on.

Heat 1,5 tbsp of olive oil on the pan or skillet that can be put into oven, and toss red onion cut feather like and fry until nicely brown. When the onion is done, add sliced chorizo and fry for a minute. Put it on the paper towel to drain the oil.

In the separate bowl whisk 6 eggs, add heavy cream and stir. Add sliced black olives, chorizo with onion, thinly shredded Manchego cheese. Spice with salt and pepper. In the end add sliced potatoes – stir very gently.

Once again heat the pan with 2,5 tbsp of olive oil, pour whole mixture and fry for 3-4 minutes. If there is too much grease on top of the tortilla, you can use paper towel to get rid of it.
Put pan with tortilla into oven heated to 160 C for 6-7 minutes. of course you can fry it on the pan, but do not forget to flip it.

Serve sprinkled with chives.
