Beans Season 😉 Yesterday, was one of the hottest days this year, and probably in the last couple years. I had scheduled some chicken dish, but the heat was so overwhelming we decided to eat a veggie meal. The other day we bought again nice

Since I started blogging I wanted to cook this one meal. It’s extremely easy, yet very stunning and elegant. I think I ate it the first time at a dinner that was served by my Godmothers mother-in-law, I think, cos I recall I was about 10yrs old? I thought at that time that the pineapple on the meat was very exotic. You can serve royal cutlets as a simple dinner for two or just impress your mother-in-law with this delicious meal. The beauty of this meal lies in the choices you can take, it can be served with any meat you please – maybe except beef 0_o. But feel free to make it with chicken breasts, turkey breasts or nice pork loin – which I used this time.

Usually I serve it with creamy mashed potatoes and a house salad with dressing of my (and of course, your) choice, however this time I got tempted by fresh yellow wax beans (of course in the yard store) and I decided to serve my royals on the bed of beans made the way Cookies showed me. Again simple yet palatable 0_o (what a word 0_o – I love this new synonyms dictionary 🙂 ).

Ingredients:
1 cm thick pork loin chops (as many as you need)
canned sliced pineapple (as many as chops)
sliced cheese (as many as chops and pineapples)
salt and pepper
thyme
900 dag yellow beans
butter
salt, pepper
fructose (or sugar of your choice)
good ketchup
parsley

Preparations:
Use your husband/boyfriend to clean beans, remove ends and cut it into smaller pieces, lets say each one in three. Put it into the skillet, pour water and add, a spoon of butter, salt and pepper. Boil until soft (not mushy tough).

While the beans are boiling, beat cutlets to soften the meat, spice with salt, pepper and thyme.

Rub some oil on the cutlets, and put on a grilling pan. Cutlets can be also made with coating of your choice. When your Royals are ready on one side turn it to the other, place slice of pineapple and slice of cheese. Keep grilling as long as meat needs done. If the cheese doesn’t melt cover the pan for a minute or two.

When beans are done drain water, add a little more butter, parsley and ketchup (enough to coat the beans). Stir gently – you don’t want mashed beans 0_o

Create bedding of beans on the plate and add cutlets. As you can see on the picture, to one hole I added some cranberry preservative, it’s not necessary but I think looks nice, and I like cranberry 🙂

On Tuesday I was so out of schedule, since we forgot to buy ground meat and beetroots for a meatballs and beetroots day, that I didn’t know what to cook… Though Cookies this time got a good idea and suggested that I use the “sun dried tomatoes that I bought for no reason”… his damn words! So I followed this idea and I needed more sour cream, so I MADE him go with me to the yard store and I was moaning the whole way (50m) how much I want strawberries for this dessert I have in mind. We got radishes instead of strawberries 0_o hahahaha just no strawberries in the yard store. Then I made him go to the other street checking if the local farmer was there but unfortunately he sold everything early and just went home. I found it out from one of my neighbours that was standing in the entrance of our building. I just voiced how unhappy I’m about lack of strawberries and just went home. About 15 mins. later I hear knocking to my door… wtf? I didn’t expect any guests. I opened the door and I just saw my 3rd floor neighbour with a plate full of nice ripe strawberries!!! I was so freaking in shock that lost my words and was standing with my mouth on the floor! She pushed the plate into my hands and said that neighbours need to help each other! I thanked her and started thinking what to do, what to do!!?? I just decided I’ll make additional portion and just take it to her ;-). So I’m rushing with the main dish and the dessert – I created such a mess… that I was damn proud of myself!! And of course, Cookies WAS MADE TO CLEAN IT, and that was my little revenge on him for rating my Monday salad only 8 out of 10. And it was freaking PERFECTION!!!

Sun Dried Tomatoes Chicken Curry without curry 0_o

Ingredients:

2 skinless, boneless chicken breasts (around 45dg – 1lb)
10dg sun dried tomatoes in olive oil
400g sour cream
1 shallot
salt, pepper, lovage and yellow poison

Preparations:

Cut chicken into strips, spice up with some yellow poison and black pepper.Tomatoes and onion cut also into strips. Pour leftover oil from tomatoes on the pan, add some more and heat up.  Put the ingredients in and fry, stirring often. When chicken is golden brown and everything smells just right and delicious sprinkle some lovage and pour the sour cream. Stir thoroughly, if it’s too thick add a little water, it has to be liquidy but not watery. Serve it with basmati rice and green cucumber salad (sliced cucumbers with sweetened with sugar (or fructose) yogurt with sprinkle of black pepper on top).

Strawberry dessert

Ingredients:  
as many strawberries as you please
walnuts, almond slices, sultana raisins – as much as to create a layer in your dish
honey
greek style yogurt
coconut flakes for decoration
2 tsp of sugar of your choice (white, dark sugar or even fructose or sweetener)

Preparations:

Take the stem of the strawberries and cut them into desirable pieces. Cut walnuts and almond slices into big pieces. Put raisins into hot water – keep couple minutes then drain. Mix walnuts, almonds and raisins pour enough honey to coat it. Add sugar into yogurt and start layering. Strawberries – honey mix – strawberries – yogurt – coconut flakes and one pretty strawberry with stem on top. Serve right away 😉

Sweets, Sweets, GIMME MORE SWEETS!!

What do you think a married couple should eat on their 6th anniversary day? Well, since we never do stuff as it suppose to be 0_o we ordered awesome, 57cm (22.5”) PIZZA!!! Damn it was humongous! We found this local restaurant from a flyer that was dropped in the mail box. We ordered the awesome “4 Seasons Pizza” – it was very good, the best part was with Polish mountain cheese called Oscypek with cranberry preserves on top. I managed to eat only 3 pieces – cos I love pizza 😉 Though I didn’t want the fourth part, and why you may ask? – Well, it had PEAS on top, can you believe that? Freaking PEAS!!! After all those carbs I decided I need more indulgence and went to the kitchen to make Banana Ice Cream. It’s so easy to make, and yet so tasty 0_o.


Banana Ice Cream:
You will need 5-6 bananas, any size is good – they have to be nicely matured, even with black spots. Cut them into pieces and put into the freezer for couple hours (if you don’t have a food processor, cube it very small… I had to use potato masher and other parts of the mixer, cos my giraffe didn’t want to cooperate!) All in all, I managed to pulp the bananas and when I tried it first time I was in shock. Never expected bananas being so smooth and gooey! Imagine, that you don’t need even 1g of sugar, yet the ice cream is very sweet. I served it with half a pear cut in quarters and dark chocolate shavings. Cookie was in awe when I put it in front of him 0_o

Some can say no sugar no pleasure, but believe me it was awesome 😉 Addtionally the streak of having bad meals on our anniversary ended at 3 this time, thankfully.

Stuffed Pork Tenderloin with Rice and House Salad This morning, before I went to work I asked Cookies what do we eat today… and he said… well I won’t repeat what he said 0_o Actually I hate to ask this question, cos it means either
