For the last couple weeks I was tormented by visions of apple cake, pie or whatever but absolutely with apples. I know a good recipe for an apple cake but the baking tin dedicated for it won't fit to my beloved halogen oven. I had to look for a pie recipe cos the pie dish fits perfectly… Now when I think about it… I could make xmas apple pie… though wanted something moist and filled. I asked Uncle Google and after some changes and alterations as usual, I come up with the recipe for apple pie that I can call 85% diet. As it contains only brown sugar, no butter, margarine or oil, only greasing the tin. It doesn’t produce a humongous amount, then to make it last – you gotta eat less!! 0_o. One thing for sure, I have to find somewhere REAL vanilla extract…

Kabobs

One of the easiest ways to prepare meat or veggie or fruit meal is just put it on the skewers and grill or bake. I remember the first time I ate kabobs, that was long time ago, we had this funny looking electric grill that had opening top with heater that was turning completely red while cooking. My father liked to make it with pork, bacon and pepper. My mother liked it with pork, bacon and onion. 0_o And I just liked all of the versions.

Now, I make kabobs when I don’t have ideas for a dinner. It’s easy and there is a never ending amount of flavors that you can put together. This time I made… surprise, surprise… CHICKEN kabobs 0_o One of my specialties are shrimp kabobs marinated in my secret ingredients 😛 and I managed to buy not very expensive shrimps lately so I’m going to make it sooooon. Cookies is jumping up and down, as he is so excited 0_o.

Ingredients
2 chicken breast halves
½ big red, yellow or green pepper. I had red and white one.
1 big onion
spices: for lazy ones – spice for poultry.
for others: salt, pepper, tarragon, ginger, basil, red pepper

Preparations:
After you clean and dry it, cut meat into bite size chunks, set aside. Cut pepper into flat pieces, not bigger than chicken. Cut onion into slate like pieces, I usually cut onion into 4 pieces and separate layers. All the big chefs say to put wooden skewers into cold water for an hour, so they do not burn, but I always forget it and just make it.

Make the skewers by skewing prepared ingredients in this way: chicken, onion, pepper, chicken, onion, pepper, chicken, onion, pepper…. uff until you finish all the ingredients. On each of mine usually fit 5-6 chunks of chicken. Set kabobs anywhere and use spices, sprinkle with oil then grill until golden brown.

Serve with anything you like, since we love wax beans I did it again 0_o

Before I met Cookies I thought that American cuisine is mostly hamburgers and fried chicken oh and apple pie 0_o. I know stereotypical, but I didn’t have a chance to change that thinking. I got the chance after Cookies and I created the basic social unit 0_o. He showed me that there is billions of meals that got created by different nations living in US. I have to admit that my favourite is Cajun cuisine that comes from Louisiana. For this recipe I created Cajun seasoning on my own – cos I couldn’t get it anywhere here. Even in the Kuchnie Swiata chain, that usually has everything special or weird I need. But what do I have Internet for? I asked Uncle Google and voila, there is nice recipe for Cajun spice! Even better, a couple versions of it! AWESOME!. I chose the one that I could obtain all the ingredients. It’s easy to make your own mixes, so no worries.

Ingredients for Cajun seasoning:
2 tsp salt
2 tsp  garlic powder
2 1/2 tsp sweet paprika
1 tsp  ground black pepper
1 tsp  onion powder
1 tsp cayenne pepper
1 ¼ tsp dried oregano
1 ¼ tsp dried thyme
Put all the ingredients into jar, mix good. every technique is good – stirring, shaking, rolling 0_o

Ingredients for Dirty Rice
3 bags or a cup of basmati rice or any other long grain
2  chicken bouillon cubes
500g ( 1 lb will do good too) ground pork
3 tbsp oil
1 small onion
1 yellow pepper
1 carrot
1 tbsp Cajun seasoning

Preparations:
Cook rice according to the users manual 0_o I hate when in recipes they tell you how to cook rice, when no way you can have exactly the same one, grrrr. The only difference is, add 1 chicken bouillon cube to the water. Set aside and let it cool, it can be leftover from the previous day.

Heat oil in the big skillet. Chop onion into tiny cubes. Toss it into skillet, fry like 30s then add meat. Let it brown good before you stir. When meat is browned, add finely chopped yellow pepper and carrot. If the bottom of the skillet is crusting, lower the heat down. Cook meat and veggies for another 5 minutes. After that time add a glass of bouillon cube, scrub the bottom gently with all the goodies 😉 and add 1 tbsp of Cajun seasoning. Stir good and cook on high heat for as long as to boil away most of the stock. Add rice and stir good again. Lower the heat and cook for another few minutes, until rice is hot.

Serve right away hot with a bottle of beer 0_o if you please.
