I remember when Cookies made this dish first time… it was our 2nd anniversary and he said it will be something special. He didn't let me come to the kitchen and just peek at what are we eating. I only knew it will be chix. I remember hearing him swearing cos sth was burning? or he dropped a spoon? Who knows, why Cookies is swearing when he cooks. There was plenty of noise, oven door etc. Later I got informed that I shouldn’t expect this meal too often cos he has only two hands 0_o whatever that means. And of course so much for romantic evening with your husband for two years 0_o. Yeah Cookies is not too romantic, but… he has his moments.

After I ate and said how wonderful it is (didn’t lie at all… it really IS wonderful) he told me the name of it: It’s Monterrey Chicken. I believe he was regularly eating it in some restaurant during his many trips to work all over US. Actually the recipe for this awesome meal was presented to me not so long ago 😉 since it was secret of the chef 0_o.And I share it with you…

Nooooo Chicken Again…

NOOOOOO Chicken again….

And I said yeah, it’s chicken again but… you will be happy, it’s new and completely different. Look, I got your favourite fresh tagliatelle from your favourite store… 0_o And it will contain CAJUN spice again!! Weeeee, goodie! Damn, Cookies is hard to deal with sometimes. Lately he is complaining all the time about the food choices. But… he always tells me… go pick couple chix breasts Babes… Then I have to think, dig, beg, read to find something that Mr Cookies will consume without bitching… This time I think I hit the jackpot! This meal contains all favourites of Mr Cookies. Pasta – present, cajun spice – present, veggies – present, creamy sauce – present! And some alcohol for the cook – white wine.

Ingredients:
2 x 250g fresh tagliatelle pasta (but can be any, I made it recently for my Dad, who had only whole grain rotini and it worked perfect too)
500g (1 lb) chicken breast
1-2 tsp Cajun seasoning (or to taste)
1 tbsp olive oil
1 red bell pepper
1 yellow bell pepper
200g mushrooms
1 red onion
1 tsp of garlic powder or 3 cloves garlic
2 tomatoes
200ml sour cream
salt, pepper

Preparations:
Prepare all veggies. Peppers cut into strips, slice mushrooms and make sure to peel tomatoes, then cut them into chunks. Onion cut into half moons,  set aside

Cut chicken into desirable pieces, can be cubes or strips, your call. Spice it generously with cajun spice (recipe for the spice with the recipe for Dirty Rice).

Heat oil in the wok or high walls skillet and toss chicken and fry on high heat for couple minutes. Take it out and set aside.

Add a little more oil, and toss onion, garlic powder and after 2-3min peppers, saute for 3-4 minutes. Add mushrooms and tomatoes and saute another 3-4 minutes. Spice with salt and black pepper.

Reduce heat and add sour cream, if too thick add some chicken broth but it shouldn’t be necessary, cook for couple minutes, stirring often.

Put the chicken back into the skillet and add more cajun spice, heat everything for a minute or two. Just before serving toss tagliatelle in, mix good to make sure the sauce and veggies covered the pasta.

Serve hot sprinkled with spring onions or parsley.

P.S. Cookies thoughts: I really complain that much? If so, this meal stopped it for that day AT LEAST… very nice mix of flavors and of course since it CONTAINED my favorite ingredients can’t go wrong… Magda Cooks… It just right!

Well, unfortunately not every recipe I try is a success. Lately I found a very promising salad on BBC Foods. It included beets, potatoes, and smoked mackerel. Seemed interesting, and different at the same time, so I gave it a shot… well… IT WAS FREAKING KATASTROPHY! I never ever ate something so hideous than this salad… okay maybe canned peas is worse, but not many other things I ate that was worse than this SHIT … OK, ok… salad. I just forgot that the BBC is British,  and they like weird mixes with fish 0_o. My Polish palate didn’t think it was possible to finish it. And as much as I despise throwing food away… I did this time. Cookies ate it, without the dressing, and piece by piece. And remarkably didn’t complain. But he would not touch the dressing. At all.

 

And no, not going to give out this recipe even if you threaten Cookies life… I would say go ahead, do him in, there is no way I share it!!!

 

The next day felt like I need to do something good or I’m facing another IDWTC Syndrome week.

 

Since I write about what I cook and serve, I couldn’t afford another couple days break. Google Analytics says this is the case! 0_o So I wanted to do something completely opposite than that freaking mistake. I remembered I have pork neck in the freezer, and I read on gazeta.pl a nice recipe for Cowboy Cutlets. It was easy, and like it came in the end very tasty.


Ingredients:
3 big pork neck cutlets
5 tbsp oil
3 tbsp good spicy ketchup
1 medium onion
7 big potatoes
Natur for potatoes or your own spices mix for potatoes
PARSLEY 0_o
2 big tomatoes
salt and pepper

Preparations:

Beat the shit out of the cutlets 😉 to make them softer, and thinner. Mince onion tiny, and put into a bowl. Pour oil, and ketchup over, mix good together. Prepare container, put a little of the marinate on the bottom, place the cutlets, and smear it good. Put into the fridge for at least an hour. Relax while FBing or looking into the ceiling, or talking with friend over the phone  0_o. Or peel the potatoes, and cube it the soup size. Pour 2 tbsp oil into a non-stick skillet, and heat it up. When hot, toss in the potatoes, then start tossing the skillet covering potatoes with the hot oil. When it’s done cover, and let cook on medium heat. Don’t forget tossing the skillet every 5-6 min. Other way potatoes will just burn ;-). 10 min of tossing, and boiling, add spices, can’t give you the amount cos I always do it by eye. If it’s Natur it is definitely half bag. Don’t worry, no water needed. After around 30 min potatoes are done. Add some parsley. Of course while tossing potatoes, you can and actually grill the cutlets ;-).

Heat the grill pan, and put cutlets straight from marinade, grill until nicely browned with dark strips. If the meat is thick, cover for last 4-5 min and it should be cooked through.

Serve with the hot potatoes and straight tomato salad with salt and pepper.

DELICIOUS!
