I know, I’m boring everybody with my peans about my beloved halogen oven… but truth is, its awesome equipment. I learned to use it quite  well – ask Cookies about Xmas turkey (post coming soon!) ;-). Since the halogen oven is not too big, plus I can’t find here right size baking forms and I like to eat some cakes 😛 yeah, beats me too 0_o. I went to the store I hate the most (only one open at the time) and believe me or not I found french dough on sale. Of course I have halogen oven now so I bought 2 big rolls. Then every time I looked into the fridge I saw it there screaming at me to use it, but I never did before and couldn’t get my head into it. Most of the recipes I found needed baking dish I didn’t have. Some time passed and I still didn’t have idea what to do… One Sunday, I think the last before the dough expired I decided I can’t wait no longer and I have to take the bull by his horns… I  took it out of the fridge and kept looking at the shelfs what I can make with it… Drawer? Carrots… peppers… celery root… piece of ginger… nah not a dessert material.. Shelf above? Pickles, mayo, stuffed olives… DAMN!!! Then I got enlightenment… There was apples inside… More painful thinking and I had it all figured out 😉 my own recipe for french dough apple filled pouches.

Something from the other side of the world

Since I started blogging, I’m doing what I always wanted – trying new things and enjoying myself in the kitchen tremendously. Everyday I’m looking for new recipes, new flavours and textures. And as a result, everyday I’m getting more courage to try things I never thought I would be able to swallow or even think the connection is possible 0_o. Cookies started me on mexican food and now I like spicier and intense flavours than traditional Polish cuisine that my mom was making.

I constantly browse the internet, cooking books and magazines in search for any interesting,  easy ideas, though sometimes my genius mind 0_o works overtime and I’m able to create something completely on my own. Don’t understand me wrong, I’m not a chef. I just love to cook and try new things, also I don’t like to spend too much time in the kitchen – I know completely contradicted what I just said 0_o. But this is how I’m always double.

As you probably noticed The Mullens eat a lot of chicken, so I constantly need new recipes to not make it boring – though Cookies is bitching “nooo another grilled chicken???”

As it happens I buy products that I have no idea what to do with so this one gorgeous Monday I was looking how to use mango that I bought. This time I found a recipe for chicken with mango that the description made me miss the tropical beach. The meal is so rich with different aromas and flavors that it made a big hit on the Cookies palate 0_o (even didn’t moan it’s grilled chicken again :D)

Ingredients:
2 single chicken breasts
½ tsp ground ginger (spice not fresh)
½ tsp cinnamon
¼ tsp ground cumin
¼ tsp cayenne pepper
1 medium mango
½ cup orange or apple juice
2 tbsp honey
juice from half a lemon
2 tsp potato or corn starch
1 ½ tbsp water

Preparations:
Mix the spices: ginger, cinnamon, cumin and cayenne pepper in small bowl. Cut chicken to desirable size – I always cut it horizontally in two cutlets, meaning in the end I have 4 thin pieces of meat and usually 2 little loins. Salt the chicken and spice good with prepared mix – set aside.

Prepare mango – seed it and dice it in small cubes. Toss to small pot, add orange or apple juice, lemon juice and honey. Let the mixture get to boiling then reduce heat and simmer for few minutes – 5 maybe. Don’t forget to stir from time to time. In a cup mix starch with water until it’s dissolved. Stir the mixture into the mango pot and simmer for 1 minute until the sauce thickens and looks translucent.

Grill chicken sprinkled with a little bit of oil until cooked through. Serve with basmati rice and with hot mango sauce on top. I also served it with the house salad.
