I don’t know if I ever mentioned this, but I despise heat. As much as I don’t like wearing heavy jackets and scarves with caps I hate summer more. The high temperature makes my brain cook and stop working (Cookies no doubt would say, that’s nothing new Woman!). So the heat started and I’m completely not in the mood to cook or actually do anything else 0_o. You probably noticed I didn't post anything for last few weeks. It was caused by the weather here that happened to not cooperate and since I'm working in the weather bound business it caused me to work 12h shifts also problems with Mr Dog makes me get up at 4:30am everyday… I just couldn't simply make myself to write a few coherent words, hell I couldn't say few coherent words to Cookies – which he was exploiting unmercifully.
Today was actually the first time when I came back home at normal time and could attend to some of my chores. Since it’s very hot outside I was leaning for something that was filling but light at the same time. And I wanted to torment Cookies a little bit I decided on salad. Looked into the freezer to check what can I use and of course the first thing was CHIX, BABY! I could just simply grill chicken and arrange it, but I knew he will be moaning loud if I do… I was looking at my pantry shelves thinking what to use… cranberry? naaah, nuts? nahhh oh maybe some sesame seeds! Its very easy way to prepare nice and crunchy chix.
- chix breast - 350g
- sesame seeds - 100g
- breadcrumbs - 50g
- egg - 1
- oil - 2 tbsp
- mixed spices bunch of different veggies including lettuce mix -
- Favourite dressing*
Start with cutting chix into bite size pieces, then just mix a little of breadcrumbs and sesame seeds. Spice chix thoroughly with any spice you like. Beat an egg, bathe chix in and roll in the crumbs with seeds. Use non stick pan tiny bit of oil, Fry until golden brown, soak on the paper towel (remember it’s light then 0_o).
Arrange veggies on the plate, prepare dressing and pour all over it. Put chix on top of it and enjoy with a glass of white wine.

*since it’s lazy hot day, I don’t overwork myself and use prepackaged one ;-) I don’t feel guilty at all... usually I make it myself, but not this time - just quick solution is the best.
