Cookies 10th favourite…

For this past Monday’s meal I cooked Cookies 10th favourite chicken meal. I think it’s an all time easy dinner. I spent 25 min all together in the kitchen making this dish. As much as I love to cook, I like fast cooking and the less time it takes I’m happier. I think it’s because I need instant results… Might be. As many dishes I make, this one can be served as just the family dinner or when you host a couple friends ;-). I found it months ago on one of my favourite sites www.onet.pl. The original one was with coating, but I decided it’s too much and stayed with the pure version that is great for easy grilling, inside or out!

Ingredients for two 😉

* 1 double chicken breast
* Green pesto or red pesto – used red pesto, cause I didn’t notice my stash of green one just grew whitey 0_o. If you know how, you can make your own, but the jarred one, especially by Barilla is really good. I always have one in the fridge.
* Salt, pepper
* 6 medium new potatoes
* For the house salad – just put everything you have in the fridge 😉

Preparations
Clean potatoes and cut into bite size. Boil as you like 😉 I usually add a Knorr potatoe bouillon cube.

Wash the breast and dry it with paper towels. Cut into two separated parts, cut also little tenderloins. Each whole breast should be cut in half to make two thick halves, not sliced in half. With a sharp knife cut a pocket in the meat, also in the tenderloins. Sprinkle with salt and pepper. Last but not least put a teaspoon of pesto inside. Set aside. While it’s resting, a little of oil that is in the pesto will flow out, smear it on the meat. When the potatoes need about 10 minutes left to finish heat the grill pan and put the chicken on. If there is not enough oil from the pesto, sprinkle with some regular oil or olive oil. Grill until golden brown and not raw inside.

Serve with new potatoes and a house salad. It also goes good with fries or curry rice.
