Well, unfortunately not every recipe I try is a success. Lately I found a very promising salad on BBC Foods. It included beets, potatoes, and smoked mackerel. Seemed interesting, and different at the same time, so I gave it a shot… well… IT WAS FREAKING KATASTROPHY! I never ever ate something so hideous than this salad… okay maybe canned peas is worse, but not many other things I ate that was worse than this SHIT … OK, ok… salad. I just forgot that the BBC is British,  and they like weird mixes with fish 0_o. My Polish palate didn’t think it was possible to finish it. And as much as I despise throwing food away… I did this time. Cookies ate it, without the dressing, and piece by piece. And remarkably didn’t complain. But he would not touch the dressing. At all.

 

And no, not going to give out this recipe even if you threaten Cookies life… I would say go ahead, do him in, there is no way I share it!!!

 

The next day felt like I need to do something good or I’m facing another IDWTC Syndrome week.

 

Since I write about what I cook and serve, I couldn’t afford another couple days break. Google Analytics says this is the case! 0_o So I wanted to do something completely opposite than that freaking mistake. I remembered I have pork neck in the freezer, and I read on gazeta.pl a nice recipe for Cowboy Cutlets. It was easy, and like it came in the end very tasty.


Ingredients:
3 big pork neck cutlets
5 tbsp oil
3 tbsp good spicy ketchup
1 medium onion
7 big potatoes
Natur for potatoes or your own spices mix for potatoes
PARSLEY 0_o
2 big tomatoes
salt and pepper

Preparations:

Beat the shit out of the cutlets 😉 to make them softer, and thinner. Mince onion tiny, and put into a bowl. Pour oil, and ketchup over, mix good together. Prepare container, put a little of the marinate on the bottom, place the cutlets, and smear it good. Put into the fridge for at least an hour. Relax while FBing or looking into the ceiling, or talking with friend over the phone  0_o. Or peel the potatoes, and cube it the soup size. Pour 2 tbsp oil into a non-stick skillet, and heat it up. When hot, toss in the potatoes, then start tossing the skillet covering potatoes with the hot oil. When it’s done cover, and let cook on medium heat. Don’t forget tossing the skillet every 5-6 min. Other way potatoes will just burn ;-). 10 min of tossing, and boiling, add spices, can’t give you the amount cos I always do it by eye. If it’s Natur it is definitely half bag. Don’t worry, no water needed. After around 30 min potatoes are done. Add some parsley. Of course while tossing potatoes, you can and actually grill the cutlets ;-).

Heat the grill pan, and put cutlets straight from marinade, grill until nicely browned with dark strips. If the meat is thick, cover for last 4-5 min and it should be cooked through.

Serve with the hot potatoes and straight tomato salad with salt and pepper.

DELICIOUS!

Last couple days I didn’t cook much. All because of this damn heat. Everyday over 90F (32C) and almost 100% humidity, you already feel like flowing in the freaking soup much less cooking one… Yesterday we simply ate fries that Cookies masterfully made. Always crispy outside and soft inside – perfect.

Now when I write it I just noticed that I made another potato meal today. Just wanted to rest from meat and since I saw this recipe somewhere I decided to make my own version of hot caprese salad with potatoes or better ON potatoes. As usual easy and not involving 0_o

Ingredients for two (always for two)
5 medium new potatoes
1 ball of smoked mozzarella (can also be regular one)
1 tomato
if you grow it 😉 use fresh basil, I used dried one
tiny bit of pepper fromage cheese (but any spiced cream cheese will do)
drip of oil
salt, pepper
and last but not least the IMMORTAL PARSLEY!! LOL

Preparations:

Boil potatoes until soft, steam out and set aside. Cut mozzarella into slices, tomato also into slices, or half slices if the potatoes aren’t too big. Cut each potato horizontally, sprinkle with salt. Smear a little of fromage cheese on top, put a slice of tomato and cover with slice of mozzarella. Sprinkle with black pepper and basil. Heat grill pan (or outside grill), smear bottoms of the potatoes with oil, or just simply deep it fast in tiny bit of oil 😉 and put halves of potatoes on the pan and grill under cover until nicely marked and the mozzarella is melted. Toss some parsley on top and serve with anything else you please 😉 I didn’t feel like making anything else…

As today is Sunday, I wanted to shine in the kitchen and make something completely new plus that was very vegetarian… I was deliberating if I should post it, but since I’m not a fancy chef I’m prone to mistakes. Yes, I made a huge mistake, though I don’t know where 0_o? Maybe I kept the ingredients too short in the fridge? Maybe a lack of egg inside or outside? Enough to say, that the taste was good… but the look and consistency left a lot of space for improvement. Idea is very easy: potatoes and feta cheese mixed and formed into small balls, then fried. However I didn’t expect it to melt THAT MUCH while frying though… a small downside you could say 0_o. Cookies said the same and rated the meal 7 out of 10 so I believe it’s not that bad. But I’m not 100% pleased of myself and this is the state I like very much! Maybe one of you will have more luck or experience to succeed with this meal.

Ingredients:
2 big potatoes
1 box feta cheese (270g)
2 shallots
2 eggs
¼ of a red bell pepper
2 tbsp sesame seeds
flour or breadcrumbs for coating
black pepper, thyme, oregano

Preparation:
Boil the potatoes with the skin on till soft, then put aside and let it cool. I suggest doing it like in the morning… while I’m writing this, I’m thinking that can be part of the problem I used it still warm and soft 0_o. Mix the feta with potatoes and 1 egg until smooth. Dice shallots and fry them until golden brown on a tiny amount of oil. Cube red bell pepper. Mix all ingredients together, try to see if it needs salt, note: that feta is salty itself. Spice it up with black pepper, a pinch of thyme and oregano. Knead together again. Put for at least 30 min to the fridge – probably longer – but I couldn’t wait – as usual. Form small balls, put into whipped egg then into a mix of bread crumbs and sesame seeds then fry until golden brown, serve with any salad you please.
